This dry red, with an excellent body and good alcohol content, with its color tending to garnet, an intense fruity aroma and a hint of almond flavor, is obtained by pressing grapes from the vines located in the sunniest part of the Valpolicella Classica. The “Ripasso” process is carried out by choosing part of the best Valpolicella and dipping it in Amarone marc for a second fermentation, then aging in oak barrels. All this allows to increase the alcohol content but also the body and the bouquet, making the wine richer in color, aromas and extracts.
VARIETY: Corvina, Corvinone, Rondinella and other grapes admitted being regulated. Vineyards grown in the Municipality of Fumane, in the heart of the Valpolicella Classica
AGING: Maturation of about 2 years in barriques and oak barrels followed by further refinement in the bottle.
ALCOHOL CONTENT: 15,5% vol.
PAIRING: Perfectly accompanies skewered, grilled, roasted, braised meats and aged cheeses
SERVICE:Serve at a temperature between 18°-20°C. It is advisable to uncork it at least an hour before serving
